Whats for lunch you ask? Pizza Pancakes!
I haven't made shaped pancakes in a while! So this was a treat to Eliana :) She was so excited to have them and she loved helping make them! Yes, they do take longer than regular pancakes but if we have the time to make them we might as well have fun with it!
These would also might work for April Fool's Day too! Pizza and pancakes for breakfast? haha since I don't really go all out on April Fool's Day this works for me :)
To make these pizza pancakes:
First mix up your pancake mix (homemade or boxed). Mix it well so there are no lumps. Eliana and I separated the batter into four different bowls for the four different colors: light brown (no food coloring) red (pepperoni), green (peppers) and yellow (cheese). Eliana helped add the few drops of food coloring and we mixed it well. Once your colored batter is fully mixed pour into a squeeze bottle.
On the skillet, or griddle (on low heat) draw out the outline of the pizza slice and the crust with your uncolored batter. Let it cook until it gets all nice and bubbly. Fill in the crust. Draw out the outline of the pepperonis. Let it cook then fill them in too. Add some "green peppers". Once all your details are cooked fill in the rest of the pizza slice with your "cheese". When the pizza pancake is fully cooked gently flip it over and let it cook on the other side.
And there ya go. Pizza pancakes for lunch or breakfast.. or dinner.. :)
If you are feeling extra energetic and creative you could make some extras and put them in the freezer. Pop them out and warm them in the toaster or the microwave and you have breakfast or lunch made easy :)
