Groundhog Day Lunch

Groundhog Day is tomorrow!
Are you hoping for an early spring or 6 more weeks of winter? I would LOVE an early spring but living in Massachusetts I'm not betting on it. New England weather can be crazy sometimes!

This groundhog day lunch was super easy to make and Eliana loved it! :)

First I made his mound from the heel of Eliana's favorite Honey Wheat bread.  I used kitchen scissors to cut the mound and used my circle cookie cutter to make sure his head fit perfectly in the mound.

I made the groundhog sandwich using my nesting circle cookie cutters.  He is a WOWBUTTERsandwich with a few mini chocolate chips sprinkled inside. I used the biggest circle for his head (the same size that I used on the top of the mound). His ears were cut with circle cookie cutters on my bread scraps, and they fit perfectly on his head! I used mini chocolate chips on top of cheese for his eyes.  
I melted some chocolate to draw out his nose and mouth and it actually came out better than I thought! However I made another groundhog to pack for another lunch and well... that nose didn't come out so great (more like horrible haha) so that groundhog won't be making an appearance here today LOL! For his teeth I used a piece of cheese and then drew a line with my edible food marker. I used a smaller circle for his little paws to help him peak out of the mound :)

Surrounding the mound is grass made of cucumber and celery leaves.  I put grass because I'm really hoping for an early spring, but I guess we'll have to wait until tomorrow to see if the groundhog sees his shadow or not! ;)
