The Lorax Snack

Today is Dr. Seuss' Birthday! Happy Happy Birthday to him!
I made this simple Lorax Snack for Eliana to celebrate :)

Ever since Samantha was born life seems to have slowed down and gone faster all at the same time. I cannot believe how fast this past year has gone! My priorities have become more revolved around her well being in addition to Eliana's and it was a lot to juggle for me! and so everything else that was extra went on the back burner.. including fun food. And while I pack Eliana's lunch every day for school, I have missed making extra fun and special fun food for her. Packing lunch every day can become mundane.. even though we make it fun with cookie cutters. I am so glad I was able to actually photograph this and share it!

Today I surprised Eliana with this Lorax Snack for her after school snack and she was SO excited, loved it and gobbled it all up. Her reaction brought me back to why I got into making creative fun food in the first place and it was such a good feeling. I hope to surprise her more often this year :)

I used a circle cookie cutter on a sundried tomato tortilla (filled with ham) and made his face with cheddar and provolone cheese. I used two Enjoy Life Foods mini chocoalte chips as his eyes.  Cucumber slices and raspberries finished it off. This fun snack was SUPER simple and easy to make! Eliana loved it, and I loved it too!
